    The blade is made from Japanese VG10 steel from Takefu Special Steel Co. in Echizen – a material renowned for its exceptional strength and sharpness. The 67 layers of Damascus steel (33 layers on each side of the core steel) not only create a beautiful pattern but also give the blade unique stability. The steel undergoes an advanced hardening process at over 1000°C followed by cooling to below -180°C, resulting in a hardness of 60–61 HRC. This ensures a sharp edge that holds its keenness even under intensive use.

    The handle in FSC-certified pakkawood provides a secure grip, even when working with smaller ingredients such as herbs, garlic or small vegetables. The material consists of compressed organic fibres treated with resin, making it resistant to moisture and heat.
