This combi oven has been developed for demanding professional kitchens, bakeries, restaurants, catering operations and gastronomic environments where versatile and precise cooking is essential. It combines hot air and steam in a single system, giving you the flexibility to prepare everything from baked goods to slow-cooked dishes with consistent heat distribution and moisture control. 

With capacity for 5 GN 1/1 trays and 70 mm spacing between levels, there is ample capacity for top-tier production volumes. 

How to use the oven

This model features a digital LCD control panel (2.4″) that makes it straightforward to manage temperature, moisture levels and programme selection with precision. The oven offers multiple fan speeds (up to 5), giving you control over air circulation and cooking results. 

Direct steam injection allows you to control humidity within the oven cavity and achieve consistent results for both steam-based cooking and traditional hot-air baking.

The combined steam and hot-air function makes it ideal for baking, roasting and preparing hot dishes where moisture and temperature control are critical to the outcome. 

Built-in cleaning and functional advantages

The oven features an integrated self-cleaning system, making it easier to maintain hygiene during daily operation without manual scrubbing. The stainless steel construction (AISI304) ensures durability and easy cleaning, while the digital controls and the range of speed and steam options make operation both flexible and efficient. 

With a maximum cooking temperature of up to approximately 260 °C, the oven can handle a wide range of dishes, from bread baking to roasting and regeneration.
