Our combination sharpening is an advanced technique specially developed for hard steel knives. The process combines ceramic sharpening with wet grinding on three different stones (220, 1,000, and 4,000 grit), finishing with specialist polishing on a leather wheel and fine honing on Belgian coticule or synthetic sapphire.

A unique sharpening technique for superior knife performance
The combination sharpening first thins the blade at the edge through ceramic grinding, after which the edge itself is wet-ground. This method creates a knife structure that both cuts exceptionally well and becomes significantly easier to maintain going forward. The knives are sharpened on rotating stones in a water bath at 90 revolutions per minute, ensuring minimal heat build-up and protecting the steel's temper.
From rough grinding to micro-finish
The process begins with a blackstone silica stone (220 grit) that efficiently restores the knife's basic shape. The edge is then refined on a supergrind stone (1,000 grit) before a Japanese superpolish stone (4,000 grit) creates an ultra-fine edge. The subsequent polishing on an oil-impregnated leather wheel with honing paste, followed by fine honing on a specialist stone, gives the knife a sharpness that surpasses standard sharpening. Our sharpening masters assess individually which finishing stone best suits your specific knife.
