After the thorough grinding, the knife undergoes a specialised polishing process. This is followed by fine honing on Belgian coticule, synthetic sapphire, or another suitable stone, depending on the knife's particular characteristics. This assessment is made individually by experienced sharpening masters, ensuring a tailored result for each knife.
